With E number E415, Xanthan Gum is used as thickening & stabilizing agent in food processing industry. It is a polysaccharide which is produced by fermentation using simple sugars. This gum can prevent separation of oil from emulsion with its stabilizing effect. It is most commonly utilized as dressing for salad and is added in sauces to make them thick. This xanthan is completely free from gluten and is provided in pure powder form. It also finds application in cosmetics industries for preparation of water gels and in concrete poured underwater for preventing washout by increasing viscosity. Xanthan Gum is responsible for uniformity of toothpaste and texture of various ice cream preparations.
